    A CDN will only help with static data. Consider partitioning your users into multiple data-centres. Each user will have their data stored in a data-centre close to them. This will help you to avoid making calls across the pond which add a lot of network time to your response. A separate advantage to processing European user data in Europe is that GDPR compliance is easier to maintain.
